I've been trying to make healthier eating habits on a day to day basis. A co-worker made this recipe for a baby shower and was kind enough to share that the recipe came from Skinnytaste.com! It's absolutely delicious and very light!!! Enjoy Southwestern Black Bean Salad
Quinoa Black Bean Casserol- Added a little corn in between bean and quinoa layer and served with extra shredded cheese, salsa and greek yogurt!! Will be making again for sure!
Black Bean Avocado!! Definitely a big win! Tweaks were: dried cilantro, bottled lime juice, yellow tomato, 1/2 as much vinegar because I'm always afraid of vinegar overpowering a dish, and I used a mixed greens salad. Served with blue corn chips. So very good!
