Quinoa salad - this is awesome. Easy peasy. A gluten free grain that is high in protein, low in calories and definitely fills you up. Make this salad up on the weekend and nosh all week on it, adding the avocado before right before you eat. Cowboy Caviar: 1 can black eyed peas, drained and rinsed, 1 can black beans, drained and rinsed,1 can shoepeg corn, drained and rinsed, 4-5 Roma tomatoes, seeds removed and diced, 2-3 diced avocados, ripe but still firm, 4 green onions, sliced thin (I used 1/2 purple onion diced finely because that's all I had), around 1/2 to 3/4 cup Zesty Italian dressing, 1/2 bunch cilantro, chopped finely,1-2 limes, ground pepper, and salt to taste!
