|1 tsp||Thyme, fresh leaves|
Baking & Spices
|1||Kosher salt and freshly ground black pepper|
Oils & Vinegars
|1 tsp||Olive oil|
|1 tbsp||Butter, unsalted|
|1/3 cup||Greek-style yogurt, nonfat|
Slice potato almost but not all the way through. Tuck butter between slices. Bake until tender. Dribble with sour cream. Shower with grated cheese. Bake again until melted and gooey. Lavish with more sour cream and chopped scallion or chili or whatever you please.
I am not a holiday food purist. When my family switched our eating habits, we carried our love of vegetables and whole grains into the holidays as well. At first, the other members of my extended family were hesitant, but after a few years, they realized that while the food was heavily loaded with vegetables, it was still delicious. These simple sweet potatoes would easily grace our table during the holidays.
