Chocolate Vanilla Chia Seed Pudding. Instead of almond milk I substituted coconut milk, a TB of heaving whipping cream, and added a little more water to compensate. DELICIOUS delicious delicious delicious delicious. Oh, and superduper easy too.
Vanilla Chia Seed Pudding.1 1/4 cups lite coconut milk (or any type milk will do...it's the seeds that turn it to pudding) 2 tablespoons pure maple syrup 1/2 teaspoon pure vanilla extract 1/4 cup chia seeds. Mix and refrigerate 3 hours or overnight. Enjoy!
Maintenance: Coconut Milk Chia Seed Pudding Pots with Raspberry Rosewater Sauce - sounds swanky but it's super-simple. Make this with all coconut milk and sweeten with xylitol or stevia, and you can even have this for breakfast.
