Chocolate Vanilla Chia Seed Pudding. Instead of almond milk I substituted coconut milk, a TB of heaving whipping cream, and added a little more water to compensate. DELICIOUS delicious delicious delicious delicious. Oh, and superduper easy too.
Vanilla Chia Seed Pudding.1 1/4 cups lite coconut milk (or any type milk will do...it's the seeds that turn it to pudding) 2 tablespoons pure maple syrup 1/2 teaspoon pure vanilla extract 1/4 cup chia seeds. Mix and refrigerate 3 hours or overnight. Enjoy!
Cocolate Chia Seed Pudding-2 cups of coconut milk or other milk, 1/2 cup chia seeds, 2-3 tbsp cocoa powder (or to taste)(optional), 1 tsp vanilla (or to taste), 1 tbsp or more sweetener of choice (optional)-use honey or a few drops of stevia tincture
Maintenance: Coconut Milk Chia Seed Pudding Pots with Raspberry Rosewater Sauce - sounds swanky but it's super-simple. Make this with all coconut milk and sweeten with xylitol or stevia, and you can even have this for breakfast.
