Overnight Oats: No-Cook Blueberry-Almond Oatmeal

Vegetarian • Gluten free • 6 hrs to make • Serves 1


1/3 cup Blueberries
1/4 tsp Lemon, zest

Breakfast Foods

1/2 cup Rolled oats, old-fashioned


2 tsp Honey or agave nectar

Baking & Spices

3 drops Almond extract, pure
1 tsp Brown sugar, packed light
1 Kosher salt
1/8 tsp Vanilla extract, pure

Nuts & Seeds

1 tbsp Almonds, toasted


3/4 cup Milk, nonfat

    OVERNIGHT OATMEAL: 3/4 cup nonfat milk, 1/2 cup old-fashioned rolled oats, 1/3 cup blueberries, 1 tsp packed light brown sugar, 1/4 tsp finely grated lemon zest, 1/8 tsp pure vanilla extract, 3 drops pure almond extract, Kosher salt, 1 tbsp toasted sliced almonds, 2 tsp honey. Night before combine all, except almonds & honey, in a glass pint jar with a lid. Secure the lid and shake. Refrigerate at least 6 hours up to overnight. In the morning, top with the almonds and drizzle with honey.
