Spinach, mushrooms, udon, and broth. Made this for dinner tonight with some modifications and it was yummy! I used 6c veg broth, sauteed the scallions with 1 tsp ginger, used 3 1/2 c mushrooms, skipped the miso and added 1 tblsp soy sauce. Also had to use dry udon noodles so I just boiled them for 5 min in the broth with the shrooms and added the spinach at the last min. It turned out great!
Simple Sesame Noodles. This is a very simple recipe. You can eat them by themselves. You can pair them with delicious roasted beef tenderloin. You can load them with red bell pepper, fresh cilantro, or cooked, chopped shrimp.
