Spinach, mushrooms, udon, and broth. Made this for dinner tonight with some modifications and it was yummy! I used 6c veg broth, sauteed the scallions with 1 tsp ginger, used 3 1/2 c mushrooms, skipped the miso and added 1 tblsp soy sauce. Also had to use dry udon noodles so I just boiled them for 5 min in the broth with the shrooms and added the spinach at the last min. It turned out great!
