Marinate thick sliced tomatoes with balsamic vinegar for 1 hour. Bake at 350 for about 7 minutes or until a little tender. Meanwhile, sauté spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice and broil til cheese is golden!

    Made these and they are simple and great. Word of advice, sauté a small onion before adding to mix. The onions didn't cook well in the onion--crunchy pieces.

Marinate tomatoes in balsamic vinegar for 30 minutes. Lay on a baking sheet, season with salt and pepper. Bake for 7 minutes at 350 degrees. Then top with sautéed spinach and mozzarella. Broil until cheese melts.
