Beef Empanadas, Mad Hungry, Lucinda Scala Quinn. These were good, but the beef mixture is a bit crumbly, as there's nothing to hold it together. Next time, I'd add a few tablespoons of tomato paste, and I might eliminate the olives- I liked them, but the flavor is pretty strong.
This recipe is amazing!!! P.S. I used a roast instead of ground beef. I put it in the crock pot overnight with two packets of taco seasoning also. Replace adding water for moisture in the meat and use the entire can of Rotel instead =) It is amazing in enchiladas too.
