Look for the Mexican quinoa recipe here too, looks delicious. cheesy Zucchini Quinoa. SUPER easy. I didn't have zucchini so I subbed in peas. The quinoa was creamy and gooey from the cheese, it just soaked it up. Great mac and cheese type side dish. Even took leftovers to work for a meal.
