      Red enchilada sauce - ADL: made this on 6/12/14. Easy and really delicious. Used 1/2 of a chipotle pepper and that was a good amount for me (mildly spicy). Definitely tastes better than the canned stuff I had before.

      Red Enchilada Sauce ◦2 Tbsp olive oil ◦2 Tbsp flour ◦1 Tbsp chili powder ◦1/2-1 canned chipotle chili (packed in adobo), rinsed & minced ◦1/2tsp cumin ◦1/4tsp garlic powder ◦1/4tsp onion powder ◦1 tsp salt ◦8oz can tom. sauce ◦2c water Heat oil in a large saucepan over med heat. Add flour and chili powder. Cook 2-3 minutes, stirring often. Add remaining ingredients and stir to combine. Bring sauce to a boil and reduce to a simmer. Simmer 10 min. Makes about 3 1/4c sauce.
