Fun Finger Foods - Cut 1 cm off the cherry tomatoes, remove the seeds. Fil w/ the tomatoe tapenade and finish w/a mini mozzarella ball. Put on a skewer. In a small bowl, mix the x virg olive oil, lemon zest & parsley. Roll the skewers in the oil, put in a serving vase or platter.
I made a platter of these for a party last year, they were a hit! I used toothpicks instead of skewers for bite-sized yummies. When I make these, I don't cut the tomatoes in half and I buy the mini ball mozzarella to make it VERY easy. I use slightly longer skewers and put them in a martini glass rather than on a plate. Sooo cute and DELICIOUS!!!!
