    Baked Ham and Egg cup... I baked egg and ham 10 minutes then added 1 T reduced fat Mexican cheese per cup, green onion, pinch of sea salt, black pepper, and chili powder and baked about 6-8 minutes more to melt cheese. My egg didn't run like the one pictured but WOW, was it yummy! Hubby liked it too. Son is still in bed but I am sure the smell will lure him down soon. Will DEFINITELY make this again! You can make it your own... next time I might try adding baby spinach and feta cheese :)

ham and egg breakfast cups These are a lot like an omelet on the go! I added chopped ham rather then lunch meat. Great fresh out of the oven and warmed up the next day. Next time, however, I will put liners in the tin! They were not easy to get out even though I spayed them AND I had a hard time cleaning the pan. -KM

Egg Spinach Quiche Cups:10 ozs. frozen chopped spinach, 3/4 cup egg whts, 3/4 cup shredded fat free cheese, 1/4 cup red bell pepper, chopped 1/4 cup onion, chopped fine hot sauce (optional) Microwave the spinach on high 2 1/2 mins. Drain completely. Line a 12 cup muffin tray w/foil baking cups. Spray the cups w/cooking spray. Combine the egg whts, cheese, mushrooms, spinach & onions in a bowl. Add hot pepper 2 taste. Divide evenly among the cups. Bake at 350, 25mins. Makes 12 muffins 75 cal ea.
