SIDE DISH AVOCADO SALAD. Avocados, cherry tomatoes, red onion, fresh basil, coriander, red chili finely chopped (optional). For the dressing: balsamic vinegar, olive oil & pepper to taste. I use this dressing (preparing the mixture in a cup) for many of my Mediterranean salads, no fat and it's delicious.
Mexican Shrimp Cobb Salad - A beautifully layered salad with shrimp, avocados, grilled corn, black bean salsa, cucumbers, tomatoes and cheese. I don't eat cucumbers, so I'd probably use black olives or just leave them out altogether
