Quinoa-Stuffed Peppers Tweaks I made:Instead of fresh tomatoes, made a sauce out of a 1/2 cup or so canned diced tomatoes and wine to put in bottom of pan. Then poured the rest of the diced tomatoes in with the rice/sausage mix. Also added some bloody mary mix I had on hand to both the sauce and the rice mix because I thought it needed more liquid.
