Pan-seared Rib Eye Steak. Preheat oven to 500°F. Room temperature 3/4 to 1" thick Rib Eye. Cast iron skillet on stove on High. Salt and pepper each side of the steak liberally. Rub oil (veg, canola or any with a high smoke point) on both sides. When the pan is rocket-hot and oven is up to temp, lay the steak in the skillet and sear both sides for 30 seconds per side.
