Dark Choc Coconut Bites Pulse 2C desiccated coconut in blender or food processor until the texture becomes like thick flour. Transfer to a bowl. Add 4Tblsp honey or maple syrup, 5Tblsp coconut oil, 1tsp vanilla. Stir until a thick paste forms. Shape into ~18 small balls. Refrigerate ~30mins, until firm. Melt 4oz dark chocolate slowly & gently until smooth & spreadable. Using 2 forks, roll each coconut ball in the choc, then lay on wax paper. Chill until hardened. Store in the refrigerator.
