Flourless chocolate chip cookies in a small batch. Perfect when you want just a little something. Baked these since it's so snowy outside. Some (most) of my chocolate chips melted as I stirred them in because the coconut oil was still warm. Oops! So they are a chocolatey brown color instead of the light golden in the photo. Still delicious!

GF + Vegan cornbread.  I didn't have canned corn, so I subbed in 1 cup almond flour, I used sugar (not quite as much as called for, & no Stevia  - yikes), & a little extra applesauce.   Dense, but good! It didn't need to bake quite as long as called for in the recipe, and it wasn't terribly crumbly.
