    Captain Russell's Jambalaya- this is quick & easy & very had seconds. I did change a few things I didn't use 1/2 cup butter just 1/4. We used bay scallops since on sale instead of shrimp. We used an orange pepper...any will do. I put soup veges in with okra & since an onion in it, I didn't put put the onion in. Also, I didn't put in the hot sauce I left that for people to add because of kiddo. Delicious!
