Homemade Oatmeal Cream Pie= done. but they were more like two oatmeal cookies with butter cream frosting. Not like the Little Debbie ones. Next time, winould do a marshmallow cream frosting and leave the egg out of the batter.
For the crust, I use 1 TBSP less butter. For the filling I use Meyer Lemons. I increase the juice to about 1 Cup, use the zest of all the lemons juiced, and add an additional egg. This may increase the baking time about 10 minutes.
This lemon yogurt cake is the perfect summer dessert and even tastes better on the second (and third) day after baking. It’s so easy to make, you don’t even need an electric mixer! Try it with a side of fresh berries or a scoop of vanilla ice cream.
