Sweet Potato, Feta Spinach Frittata (Low Fodmap, Gluten Free) I used 10 eggs, chopped the spinach, threw in 1/2 cup milk (could use LF), 1/2 cup light cream (use LF), 1/4 cup chopped bacon (sautee'd in garlic oil) and used regular cheese instead of feta. Also threw in 2 baby capsicum (okay for some in small amounts). Was delicious, although took nearly an hour to cook.
