My new favorite food-Quinoa!  Here's a side dish from AllRecipes:  I just made a few minor changes to this recipe.  I used chicken broth instead of vegetable broth and sauteed the onion with the garlic.  Lots of flavor!

Quinoa Mexi-Lime Salad: 4 1/2 cups cooked quinoa 1 can black beans, rinsed + drained 1 can yellow corn, rinsed + drained 2/3 cup red bell pepper, diced 6 scallions, chopped (whites and greens) 1/4 cup tightly packed cilantro, chopped 1 large jalapeno, remove seeds and dice 1/3 cup lime juice 1 1/2 tsp salt 2 Tbsp cumin 2/3 cup olive oil S to taste

Homemade Salsa:

2 cans of diced tomatoes
1 litle can of diced green chilis
1/2 bunch cilantro chopped
1 clove of garlic minced or garlic powder
3-4 whole green onion (stem included) chopped up
Couple shakes of red pepper flakes
1 tsp of salt (I usually add a little more...I like salty) 
Blend it all together minus the tomatoes, then add the tomatoes and blend a little mince the tomatoes....sometimes I like more chnky,sometimes I like it more smooth....opinion
