2 1/2 lbs Chicken thighs and drumsticks

4 Garlic cloves, large
1 Onion, small
3 Scallions
4 Scotch bonnet or habanero chile, fresh
1 tbsp Thyme, fresh leaves

Condiments

1/4 cup Lime juice, fresh
2 tbsp Soy sauce

Baking & Spices

2 tsp Allspice, ground
2 tsp Black pepper
1 tbsp Brown sugar, packed
1/2 tsp Cinnamon
3/4 tsp Nutmeg
1 1/2 tbsp Salt

Oils & Vinegars

3 tbsp Olive oil
