Good listing of substitutions when you don't have the original ingredient on hand. I am not a vegan, but some of these options are healthier.

Shortening Substitution: 1 cup butter or margarine can be substituted for 1 cup shortening. When using shortening in place of butter or margarine, 1 tablespoon milk or water for each 1/2 cup shortening used may need to be added. DO NOT substitute vegetable oil for shortening when recipe calls for melting the shortening.

Half-and-Half Substitute: For dishes that are cooked or baked, you may substitute 4-1/2 teaspoons melted butter plus enough whole milk to equal 1 cup. One cup of evaporated milk may also be substituted for each cup of half-and-half cream.
