Scotch Eggs, OMG! These look super delicious, the only thing that would really need to be altered would be to use nut crumbs or something similar in place of the bread crumbs, but it could totally happen!
So yummy! Just peel the eggs and cut them near the egg yolk. Place all of the egg yolks in a food processor and add anything you want (mayo, dijon mustard, even a small bit of sugar). Fill each boiled egg and use olives or peppercorns for eyes and carrot triangles for the beak!! Do not over boil so that the egg yolk stays that pretty yellow!!
