Paleo Chocolate Chip Cookies: 3 ¼ c almond meal, 1 t salt, 1 t baking soda, 2 eggs, room temperature, 1 t vanilla, ½ cup honey, ½ cup coconut oil, melted, 1 ½ cups choc chips. Bake at 375 for 8-10 min.

This is so good.  A nice amount so you can't over do it.  Use a silicone mold if you have one.  Sometimes I skip the pbutter and add 1 Tablespoon of chopped pecans or unsweetened coconut or both.  30 minutes in the freezer and yum!
