Garlic-Basil Vinegar: 1½ C fresh basil leaves; 4 C white wine vinegar; 1 clove garlic, thinly sliced; 2 lemon zest strips:1"wide/2"long | Rinse leaves; pat dry; chop. Nonreactive pan over low, warm vinegar til hot; do not boil. Basil, garlic, zest in nonreactive bowl. Pour hot vinegar; stir. Cool. Cover. Chill 2-4 weeks; longer, stronger flavor. Stir every 2 days to blend. Strain: fine-mesh sieve & also coffee filter.
