Oven-Roasted Cauliflower w/ Garlic, Olive Oil and Lemon Juice 5-6 c. cauliflower florets (1 medium cauliflower) 1⁄4 c. EVOO 1 tbsp garlic, sliced 2 tbsp lemon juice 1 tsp salt 1⁄2 tsp black pepper 2 tbsp parmesan cheese, grated Preheat oven to 500. Place the cauliflower in a large saute/roasting pan. Drizzle olive oil over the cauliflower, season with the garlic, lemon juice, salt and pepper. Cook for 15 minutes, stirring occasionally. Remove and sprinkle with the Parmesan. Serve warm.

Incredible Baked Meatballs. 1lb hamburger, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cup panko or bread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.
