    Crunchy Roasted Chickpeas-and inexpensive snack option that is full of protein, fiber and iron. Ingredients: 2 cans chickpeas, 3 T extra-virgin olive oil, coarse salt, and 1 1/2 tsp. cinnamon, paprika, pepper, etc. Drain and place peas on paper towels and let sit out overnight to dry out. Mix peas with olive oil and then season to taste. Spread out on a baking sheet and bake at 200 for an hour or so.
