Took a little extra work to process in the food processor because they were so moist that the "dough" would get balled up and just spin around, so I might try w/o pre-soaking the fruit next time. But these are super-yummy, and there's not guilt in letting my kids have one for a snack :)

Once combined, add the carob, ground nuts and coconut and mix together. 3. Pour mixture onto a small baking sheet or square pan covered in parchment paper. Brussels Sprouts with Brown Butter and Sage Serves 6-8 2 # of Brussels sprouts, trimmed and halved 2 T EVOO and butter 6-8 fresh sage leaves, chopped Salt and pepper Preheat the oven to 425 F. Toss sprouts w/EVOO. Put the Brussels sprouts sliced-side down on baking sheet, and bake 10-12 mins, or until soft. While the sprouts are roasting, heat butter and sage in pan over med heat until butter is light brown 2-3 mins. Remove from oven. Toss to coat w/ mixture and season to taste.

3 ingredient energy bars: 1 cup almonds, 1 cup dried cherries (cranberries, blueberries apricots, etc) & 1 cup dates. Whizz them together in a food processor until they combine into a thick paste, press into a square, chill, and chop into squares for snacking. Done.
3 ingredient energy bars. Nuts and cherries can be swapped for any nut of dried fruit but dates need to be kept as a binder (also adds sweetness without using sugar!). Add chia seeds, shredded coconut or even dark choc chips
