Blueberry & Raspberry Syrup!!! Yum yum! I used blackberries instead of blueberries and it was great. Make sure you add 1 T. of lemon juice and 1T. of cornstarch dissolved in 2T. of water. So good you will never go back to plain old regular pancakes syrup again! OMGoodness - AWESOME! Used 2 cups of blueberries (no raspberries). Substituted white sugar for just under 1/4 cup maple syrup and then added a little white sugar to make it a "true" 1/4 cup. After it had boiled and simmered, I used a masher to mash it up. Also added 1 tbsp of french vanilla creamer near the end. A-mazing!
Lemon blueberry pancakes. This is our favorite breakfast treat! I've been making this for years. I'll make a ton and then freeze the rest. Flash freeze them and then stick them in a gallon size freezer bag. When you're ready to eat them, pop them in the toaster.
