Today my mom and I gave a baby shower for my beautiful cousin Jessica. She is having a baby girl in September. They are naming her Hanalei Lee. We are all so excited a for Jessie and Mike. I know they will be such great parents. The menu for the shower was extensive...as are all menus for parties we usually throw. Its so hard to decided on what to serve and what not to serve. We had fruit salad, pasta salad, goat cheese and watercress tea sandwiches, roast beef and horsey sauce tea sandwiches, ham and pickle roll ups, Caprese salad, and of course chocolate ganache cake and ice cream. I was in charge of making the goat cheese and watercress sandwiches, and the cake. I first made these goat cheese and watercress sandwiches for another shower I did for my niece, Kristi. Its a crazy combo, goat cheese on cinnamon raisin bread, but it works so well! I love these! The recipe comes from epicurious. The chocolate ganache cake recipe comes from Sandra Lee's Semi Homemade Desserts cook book and is so easy and extremely elegant and rich. Goat Cheese and Watercress Tea Sandwiches 2 5 1/2-ounce logs soft fresh goat cheese (such as Montrachet), room temperature 1/2 cup chopped watercress leaves 16 thin slices cinnamon-raisin, date or whole wheat sandwich bread, crusts trimmed 5 tablespoons (about) unsalted butter, room temperature 3/4 cup finely chopped toasted pecans Watercress sprigs (for garnish) Mix cheese and chopped watercress in medium bowl. Season with salt. Spread mixture evenly over 8 bread slices. Top with remaining bread. Butter edges of sandwiches. Cut sandwiches diagonally in half. Place pecans on plate. Dip buttered edges of sandwiches into pecans. Arrange sandwiches on platter. Garnish with watercress sprigs. (Can be made 8 hours ahead. Cover sandwiches tightly; chill.) Chocolate Ganache Cake Cake 1 box Swiss chocolate cake mix 1 box instant chocolate pudding mix 1 cup water 4 eggs 1/3 veggie oil 1/2 cup semi sweet chocolate chips Ganache 1 cup heavy cream 1 package semisweet chocolate chips 1. Preheat oven to 350 degrees. Butter and flour a 12 cup bundt pan. Combine cake mix, pudding mix, water, eggs, and oil in large bowl. Beat for 2 minutes or until well blended. Stir in the 1/2 cup chocolate chips. Transfer batter to bundt pan. Bake 45 minutes or until a toothpick inserted neat the center of cake comes out clean. Cool cake in pan for 15 minutes before transferring to a cooling rack. Cool cake completely. 2. Heat cream in a small sauce pan over low heat until small bubbles appear. Remove from heat. Add the 12 ounces of chocolate chips to the cream and stir until smooth. Cool ganache just until slightly warm. Pour ganache over cooled cake. Transfer to a serving platter. Garnish with additional chocolate chips if you like.

Sandra Lee Key Lime Bars- the recipe calls for Mothers cookies which I'm familiar with from the NW but I couldn't find here. Nothing compared! So, I improvised and used a sleeve and a half of Lorna Dunes, about 1/3 c. graham cracker crumbs, about 1/3 c. Coconut and ran them all in the food processor. Added the butter as it says. Finished the recipe as written and OMG these are great! Make again in a heartbeat.

Today is National Chocolate Chip Day! What a reason to celebrate. I've posted lots of different recipes for Chocolate Chip Cookies, Chocolate Chip Macaroons, Chocolate Chip Pancakes and Chocolate Chip Biscotti, but I'm pretty sure I haven't posted a recipe for Chocolate Chip Bars. My favorite recipe is adapted from an original Nestle Toll House Chocolate Chip recipe for Chocolate Chip Pan Cookies. They're really bar cookies, and I guess it's just all about how the cookie crumbles.... Lots of options in this recipe, too. You can use nuts or not and the nuts you use can vary. You can also add dried cherries or dried blueberries. Whatever you decide, enjoy the day! CHOCOLATE CHIP BARS Ingredients 2 1/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt (original recipe called for 1 tsp/but I don't use as much salt) 1 cup sweet butter, softened (original recipe didn't discern sweet or salt, but I use sweet) 3/4 cup granulated sugar 3/4 cup packed dark brown sugar (original recipe didn't stipulate dark or light) 1 teaspoon Madagascar vanilla extract 2 large eggs 2 cups Semi-Sweet Chocolate Chips 1 cup chopped walnuts Directions PREHEAT oven to 375° F. Grease 15 x 10-inch jelly-roll pan (a baking sheet with 1 inch deep sides)*. COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chips and nuts. I will admit it. I dread when my kids say that they want chocolate chip cookies. For some reason, they just never turn out as well as my Mom's. I don't know if the butter gets too soft or if I over mix them, they usually come out flat. So, when my son asked for them yesterday, I thought that I might try making them as a bar cookie, hoping that they might turn out a little better. My family LOVED them !!! Even I ate a bar (ok, 3). I am super critical of my own baking, so if I ate 3, you KNOW they were good !! ;) Chocolate Chip Cookie Bars Ingredients 2 1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 cup (2 sticks) butter, softened 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract 2 large eggs 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels 1 cup chopped nuts (optional) Directions PREHEAT oven to 375° F. GREASE a 15 x 10-inch jelly-roll pan. (Be sure to use this size or you might not get a good result. Trust me on this one !) BEAT butter, sugars and vanilla in large bowl. ADD eggs, then beat in flour mixture. STIR in morsels and nuts (if you want them). SPREAD into prepared pan. BAKE for 20 to 25 minutes or until golden brown (I cooked them for 22 minutes and they were perfect !). Cool for about 15-20 minutes, then cut into bars. Nestle Toll House - Gotta give credit to the experts on this one !!!
