INGREDIENTS 2 pounds potatoes, peeled and cut into 1-inch cubes 4 cloves garlic, peeled 5 strips bacon, fried & chopped 1 cup thinly sliced scallions 1/2 cup low-fat milk, warmed 1/2 cup low-fat sour cream 1 teaspoon salt 1/4 teaspoon black pepper boil potatoes w/garlic in salted water. Mash potatoes w/milk, sour cream, S/P. Stir in bacon & scallions. Reheat if necessary.
