Broccoli, ham and egg casserole 4-6 cups very small broccoli flowerets, blanched about 2 minutes, then drained well. 1-2 cups diced ham (1/2 - 1 lb.) 1 cup low-fat grated Mozzarella 1/3 cup thinly sliced green onion (optional, but good) 8-10 eggs, well beaten
in a bowl: 1 ½ cups mozzarella cheese 2 Tbsp 1/3 fat cream cheese Microwave 1 minute. Stir, reheat for 30 seconds Continue to heat for 30 seconds at a time until it is melted. Then add: 1 egg Mix and add: ½ cup almond flour ¼ cup golden flax meal Mix with your hands like you would bread dough. Bake at 425 for 10 min. Then, poke it with a fork several times because it was very puffed up add sauce, and toppings and bake until done by-Kristi Temple
Spinach Cilantro Meatballs (grain free) - delicious. I accidentally added an extra egg. They turned out great so I might always add an extra egg so I don't mess them up! ;) The whole family liked these!
