Cherry Tomato Puff Pastry Tart: 1 pt. cherry tomatoes, oil, s, basil, oregano, 1Tb horseradish mustard, 1/3c mozz, 1/3c gruyere, 1/3c parm. Thaw 1 sheet puff pastry. 400* oven. dock pastry w fork. Spread mustard on dough then cheese and top with tomatoes.++Cut side of tomatoes must be facing up to prevent soggy dough. Bake 15-20 min.
Zucchini Chips These are good--and I've done them with squash too! I slice them thin, dip in egg/milk mixture then roll in original flavored bread crumbs with panko. Salt, pepper, paprika and spray the top with olive oil cooking spray. Bake at 350 until brown and crisp. We like them dipped in Ranch dressing, but tonight I'm going to mix up some "fake" Cane's sauce!
tomato basil parmesan soup for the crock pot. Made this today. Subtle tomato flavor. Lightened it by using 1c skim milk and 1c half and half. Didnt stir in Parm but just grated some on top before serving. Great with simple grilled cheese sandwiches. Kids liked the soup. Though not likr Norstrom Cafe's tomato soup (which has something like 2 cups of heavy cream), I will make again.
