Coconut Mango Chia Pudding Author: The Peach Kitchen Ingredients 4 tbsp chia seeds 2 cup coconut milk or almond milk 2 tbsp honey 6 tbsp diced ripe mango Directions Stir together all the ingredients in a bowl except mango and mix well. Chill for about 6 hours or overnight. Top with diced mango when ready to serve.
For Pudding: 1 Ripe medium banana 1 tbsp raw organic cacao or cocoa powder, unsweetened (optional) 4 tbsp chia seeds (white or black) 1 1/2 cups vanilla almond milk, unsweetened Garnish optional: Sliced bananas cacao nibs Directions Blend ingredients Refrigerate overnight in glass container Serve with optional garnish
Chia Seed Pudding. Yum! I made this 3/21/13 and it was excellent. I used 1 tbs chia seeds, 1/2 cup crushed pineapple, 1 Splenda, 1/2 cup unsweetened vanilla almond milk and 1 tbs Torani sugar free chocolate. It was SO good! As dessert or breakfast - E. :) yummy warmed up for 1 1/2 mins in microwave
