Jalapeno Popper Chicken. This chicken combines the great things about poppers and puts them into a much lighter and less guilty chicken dish. Chicken breasts are stuffed with a cheesy jalapeño mixture and then rolled in crispy panko and baked, not fried!

Only I use light laughing cow swiss cheese ( 1 wheel in place of 8 oz. block of cream cheese), a bit of grated cheddar, rub my favorite BBQ sauce over top before baking, and cook on a lower temp. for a bit longer when I have time. It also helps to attach the bacon on with a toothpick.
Jalapeno popper dip-- This is SO good! Always a hit at any party. (Easy to make low-carb by leaving off the panko topping.) Typically eaten with tortilla chips, it is also good as a veggie dip, steak or burger topping, etc. It would make a delicious omelet filling, too.
Breakfast Poblano Poppers in a Blanket. Scrambled eggs, mexican blend, cheese. Wrap in cressant roll dough & bake according to package directions. You may need to lightly cover top with sheet of foil if cheese starts to get too brown.
