|1 lb||Corn, frozen|
|1 small clove||Garlic|
|1/2||Lime, Zest and juice of|

|1 tsp||Chili powder|
|2 tbsp||Butter, unsalted|
|1/3 cup||Greek yogurt, 2-percent|
|4 tbsp||Parmesan, grated|
Confetti corn recipe. "This dish can be made up to 2 days ahead of time. Scoop the creamy corn mixture into an oven-safe dish, sprinkle with the bacon and cover with a lid or plastic wrap. Store in the refrigerator. When ready to eat, heat the corn dish in a 325 degree oven for 15-20 minutes until heated through."
Creamy Baked Corn in a Pan - oh-muh-gah! this is so delish. I had to bake fifteen minutes longer than the suggested baking time, but that is probably because of the shape of my baking pan (kind of like a baking bowl, really). I didn't use any of the toppings...I just used this as a side dish for an all-meat chili. Definitely a keeper!
