4 (6-ounce) firm white fish fillets, firm white


2 cloves Garlic
1 (1-inch) piece Ginger
6 Scallions
1/3 lb Snow peas


1 tbsp Soy sauce

Baking & Spices

1 Kosher salt and freshly ground pepper
1 Pinch Sugar

Oils & Vinegars

2 tbsp Peanut or vegetable oil
4 tsp Sesame oil, toasted

Beer, Wine & Liquor

2 tbsp Chinese rice wine or dry sherry
