12 oz Baby spinach, leaves
2 cups Cherry or grape tomatoes, small
1 (15-ounce) can Garbanzo beans
2 Garlic cloves
2 tsp Lemon, zest
12 oz Swiss chard or mustard greens

Pasta & Grains

1 lb Orecchiette or other short pasta

Baking & Spices

1 Kosher salt and freshly ground black pepper

Oils & Vinegars

1/2 cup Olive oil

This is an awesome recipe. The lemon is a little overpowering the first day, but day 2 is wonderful.

Penne with Spinach Sauce NOTES: I added walnuts and an egg to the mixture in the blender to up the protein and creaminess of the sauce. I also left out the goat cheese, which I didn't have, and used 2 oz. cream cheese. The pasta was delicious but very garlicky. Next time I will use just one large clove of garlic.
