Minestrone With Parmigiano-Reggiano

1/4 lb Pancetta


3 cups Cannellini beans
2 Carrots, large
2 large stalks Celery
4 cloves Garlic
1 Red onion, large
1/2 head Savoy cabbage
1 cup Spinach
1/2 bunch Swiss chard
3 Tomatoes, medium
1 Waxy potato, large

Canned Goods

4 cups Chicken stock, low-sodium

Baking & Spices

1 Kosher salt and freshly ground pepper

Oils & Vinegars

3 tbsp Olive oil, extra-virgin


1 Parmigiano-reggiano cheese, Grated


1 Bouquet garni (1 sprig rosemary, 4 sprigs thyme, 1 bay leaf and 1 bunch parsley, tied together with kitchen twine)

    Minestrone With Parmigiano-Reggiano **I used rotel instead of diced tomatoes, white beans instead of kidney beans. Nixed the green beans and celery but added a can of mixed veggies with potatoes instead. Also added 3 extra cups of water." Delicious!
