We LOVE Latkes all year round. This is the recipe we base ours on. Fantastic with homemade applesauce or baked apples. If you grow zucchini, try shredding some with the potatoes in the summer. Super yummy!

Zucchini & Sweet Potato Latkes - this is really good! The only thing I would say is to remember to drain the water from the zucchini before mixing it with everything.  I had to do it after, and I think I lost a little flavor that was already mixed in from the spices.  Really yummy though!  I made a bunch and put them in the fridge to have with any meal.
