    Zucchini Fritters 2 eggs 1/4 c parsley, chopped 1/2 c grated Parmesan cheese 1/2 c flour 1/2 tsp baking powder 1/4 c tarragon, chopped 1/4 tsp nutmeg 1/4 tsp salt 1/4 tsp pepper 1 lb zucchini, grated Combine all ingredients except zucchini. Whisk to remove large lumps. Grate zucchini and add to batter. Use the batter immediately. Heat oil in a large skillet over medium-high heat. Use 1/4-c measure. Cook 2-3 min on each side until lightly browned. Drain on paper towel.
