      Sweet Corn & Zucchini: 2 c coarsely chopped zucchini, 1/2 c diced sweet onion, 3 T butter, 2 c fresh corn kernels, 1/4 c chopped fresh chives, 2 t taco seasoning mix. Sauté zucchini and onion in butter in a large skillet over medium-high heat 5 minutes. Add corn kernels, chives, and taco seasoning mix; sauté 5 minutes or until tender. from Southern Living, March 2010
