Baked Elephant Ears
We tried a new recipe this week, making Elephant Ears for my friend Ellen, her daughters Elizabeth and Esther, and Everyone Else in their family. Anyone else never heard of Elephant Ears? Basically, it's a flaky dough rolled up and sliced like a cinnamon roll and then flattened into circles and baked like cookies. So it's a cinnamon roll cookie. Sort of. Anyways. Apparently these are treats found at county fairs....(I think it's been about 20 years since I went to a fair, so I cannot confirm that) but often times they're deep fried. I wanted to avoid that......so this recipe fit the bill. I found it on my good old standby, Allrecipes. I did make some changes, because things were NOT working according to the original directions. For example, if you don't knead enough flour into the dough before rolling it out, it will be too sticky to do anything. Also, parchment paper is your friend for baking these.....and don't forget it! Be sure to plan ahead because the dough has to chill for a couple of hours. The result: my kids LOVED them and are begging me to make more. I thought they were really good too, despite the mess I made in the kitchen. It's fun to try new things. I did double this recipe to make enough for both families. Recipe: (yield - 14 to 18 rolls) 1 (.25 oz) package active dry yeast (or 2-1/4 t. bulk yeast) 1/4 cup warm water 1/2 t. sugar 1/2 cup warm milk 1 egg yolk 2 cups all-purpose flour (or whole wheat) 1-1/2 T. sugar 1/2 t. salt 1/2 cup butter, cold 2 T. butter, softened 2 cups sugar, divided 3-1/2 t. cinnamon, divided 4 T. melted butter (optional) 1/4 c. chopped nuts (optional) Dissolve yeast in water with 1/2 t. sugar. Combine with milk and egg yolk and set aside. In a large mixing bowl, combine flour, 1-1/2 T. sugar, and salt. Cut in butter until pea-sized or smaller. Add the yeast mixture and stir well. Cover and refrigerate for at least 2 hours. Preheat oven to 400°. Turn dough out onto a heavily floured surface - (read at least 1/2 cup, maybe more of flour). Knead lightly, then roll out into a rectangle 10"x18". Spread with softened butter. Combine 1/2 c. sugar and 2 t. cinnamon and sprinkle over the dough. Roll up like a jelly roll, sealing the edge. The roll should be 18" long. Cut into 1 to 1-1/2 inch slices. Combine remaining sugar and cinnamon. Pour some onto your pastry board. Take one slice of dough at a time, flatten into a large circle on top of the cinnamon sugar, and sprinkle with nuts if using. Place on a cookie sheet lined with parchment paper (seriously, don't skip this....you'll be sorry if you do). Brush with melted butter (if desired) and sprinkle with more cinnamon sugar. Bake for 10-12 minutes (10 was perfect in my oven). Cool on wire racks. Sorry if these seems confusing....I kind of had to wing a few things as I went so writing it down can be a little hard to explain. Just ask me if you have any questions!

Recently food scientists have begun to tout the virtues of chicken dark meat, such as drumsticks, so cast aside your focus on lean breast meat (which can often be too dry) and give this scrumptious recipe a try. The chicken is cooked in a very hot oven, so this is a perfect main course when you are looking to warm up your house a bit – as we are want to do these days. Temperatures have dropped into the 60s! I found the recipe here, via TasteSpotting, although I have modified it a bit. The photo as well is from The Comfort of Food blog. Yields 12 chicken drumsticks Ingredients: 1/2 cup balsamic vinegar 1/2 cup honey 1/2 cup brown sugar, packed 1/4 cup low-sodium soy sauce 3 garlic cloves, minced I small-ish onion, minced 12 chicken drumsticks (I used 20, smaller, “Drumets”) 2 Tbsp. sesame seeds 1/4 cup chopped fresh flat-leaf parsley Directions: Combine the balsamic vinegar, honey, brown sugar, soy sauce, onions and garlic cloves in a large resealable bag (a good one that will not pop open when you are handling it). Clean up the drumsticks by rinsing well and snipping off any excess skin with kitchen shears. Add the chicken to the bag and seal. Toss and mush it around to mix well, coating all the chicken. Marinate in the refrigerator for at least 2 hours. Preheat the oven to 450 degrees. Line a rimmed baking sheet with aluminum foil. Top with a cooling rack. (I do not have said cooking rack so I just went commando.) Remove the chicken from the bag, reserving the marinade, and arrange the drumsticks in the lined pan (on the cooling rack, if you have it). Bake until the skin is caramelized and dark in spots, about 30 minutes. I cooked it for nearly an hour. I wanted a little crisp. Meanwhile, place the leftover marinade in a small saucepan, uncovered. Bring the marinade to a boil, then reduce the heat to a simmer and cook over low heat until thick, about 15 minutes. Use a pastry brush to brush the cooked marinade on the chicken. Return chicken to the oven for 10 more minutes (or longer, as desired). I think you really want some little burnt patches on the skin – to get that BBQ touch. Don’t worry, it will not dry out. If you like – brush just a bit more heated marinade on them before serving. Since I did not use a cooking rack (for lack of one available) I then placed the chicken in a single layer on several layers of newsprint (you could use a brown paper bag) to drain some of the grease (or as Luiz likes to say: “The juice”). Place the chicken on a serving platter and sprinkle with the sesame seeds and the chopped parsley. Have napkins at the ready! I served this with creamy mashed potatoes, steamed green beans and a salad.

This rivals the delicious authentic Arroz Con Pollo we had in the hotel we stayed at in Mexico City. I always buy plenty of tortillas from Costco since my family like them very much. A few day ago, I found this homemade tortillas recipe, why not to try making them by myself ? Nothing compares to the smell and taste of a freshly made tortilla. Making homemade tortillas really does not take much time. I love the results of making my own homemade flour tortillas.Here is an easy and quick way to make flour tortillas from scratch! You'll need to mix the dough, flatten it into rounds and cook each one on the stove to create delicious tortillas perfect for filling with taco meat or veggies. Ingredients for 4 wraps: White flour 2 cups – all purpose flour Starch powder – 2 tbsp Salt – 1 tsp Water 3/4 cup Olive oil – 2 tsp White flour – 2 tbsp (Anti sticky purpose) Directions: 1. Sieve the flour, salt and starch powder. 2. Add the water and olive oil. 3. Kneed the dough. ( recommend to leave it like that for about 1 hour in the fridge, keep going to next step without having any break.) 4.
