      For the Love of Portuguese Food: CALDO VERDE

      2 tbsp of EVOO, 1 onion, 3 garlic cloves, 8 med potatoes, in quarters, 5 quarts of water, Salt & pepper, 2 cups of kale, washed, thinly sliced, 1/2 lb linguica, sliced into 1/4" pieces In a med pot, boil water. Add onions, garlic, potatoes, oil, salt & pepper. Cover & boil over med heat for 30-40 min. Remove potatoes, onion & garlic, puree & return to water. Add linguica. Boil add kale. Simmer until kale is cooked covered. Skim off fat. Allow to simmer without cover to allow soup to thicken.
