Strawberry Cucumber Tea Sandwiches, The Hungry Housewife: Leslie Green *Serves 16* 8 slices bread, 4 oz cream cheese - softened, 3/4 Tbs balsamic glaze (or make a reduction), 1 English cucumber, 8 washed strawberries, pinch of Kosher salt, pinch of fresh or dried dill. 1. Mix together cream cheese and balsamic glaze until fully incorporated. Set aside. 2. With a 2 inch cookie cutter, cut 2 bread rounds out of each bread slice for 16 total. 3. Spread equal amount of the cream cheese mixture on each round. 4. Slice 16 thin pieces of cucumber & place on top. 5. Top w/thin slices of fanned strawberry (place a dab of cream cheese underneath the strawberry to serve as a glue) 6. Sprinkle each sandwich with kosher salt and dill (you might layer the dill throughout if your prefer).
