Kale Chips. I had a bunch of leftover Kale from making Zuppa Toscana the other night, so I thought I would give this recipe a try. I was pleasantly surprised at how yummy these Kale Chips turned out! Super easy to make, and a very healthy snack!

Sauteed onions, garlic, sausage, kale, and tomatoes. In olive oil, lemon juice and black pepper. ---ALSO SAW THIS IDEA: sautéed kale with bacon, drizzled with lemon juice and topped with poached eggs sprinkled with paprika YUM!
Paleo Pumpkin Bread. I had some leftover pumpkin, so I gave this a try. It made two mini loaves. Turned out tasty... a little dense though. I was hoping it would rise a little more. May need to adjust the baking soda (and possibly add some baking powder too). Altitude does crazy things to baked goods.
