Pinto Beans

Gluten free • 12 hrs to cook • Serves 6-8


1 Smoke ham hock or leftover ham bone


2 clove Garlic
1 Jalapeno, whole
1 16 oz bag Pinto beans

Baking & Spices

1 tsp Chili powder

Nuts & Seeds

2 tsp Cumin

    This is a crockpot pinto bean recipe. Can also be made on the stove top, reduce cooking time to about 2-3 hrs. over a med. simmer. Can use pork or bacon, but ham hocks give you more flavor! Rinse beans and pick out any bad ones. Using "Casserole" brand is recommended. Place all ingredients in crockpot. Fill crockpot 2/3 full of water. Turn on low and cook overnight.

Going to try this but modified. I don't have Herbs De Provence so I'm not sure what I will rub it with. I don't have red peppers so I'll layer the bottom with onion and carrots and stuff the bird with apples, carrots and onion. We'll see how it tastes.

Crock pot dinner. Easy peasy. Might i add, this was delicious and so easy, though I never like the house smelling like broccoli. I made a huge batch and it freezes really well. We have had it twice and still have another meal in the freezer! Definitely worth trying.
