Avocado chicken parmigiana-Mmmm. I was not expecting this to be so easy, but it was very simple and so fast! It turned out great and everyone loved it. We used some homemade pizza sauce leftover from another night. The avocado was perfectly creamy and added such a welcoming contrast to the crisp and moist chicken. We ate this with a salad, but I am sure with pasta it would be great too.

Avocado Chicken Parmesan - Oh my gosh, this was soooooo good!!!!! I doctored it up a little bit by putting a little seasoning in both the flour and the breading, and it was delicious. We had it with a fresh arugula salad.

Avocado Chicken Parmigiana!!! ( I don't love the idea of the marinara sauce but love the chicken, avocado and cheese!)

Chicken Avacado - now on my favorite recipe list! I did it a little differently. Dipped in flour, egg/milk mixture than ITALIAN bread crumbs. Lined baking sheet with tin foil and baked at 350 for about 10 min on each side. After chicken was cooked through, I added sauce, avocado and mozzarella/parmesan blend. Baked 5 more min. until melted. So good!! I skipped bread crumbs but loved this!
