PASSOVER RECIPES including: ROLLS 1/2 cup oil 1 cup water 1 cup matzoh meal 1 tablespoons sugar 1 teaspoon salt 4 large eggs Preheat oven to 350 degrees. In saucepan, bring oil and water to a boil. Remove from heat. Add matzo meal, sugar and salt. Mix well. Beat the eggs and add a little at a time to the above mixture. Put a little oil on your hands and shape mixture into 12 small balls. Place on ungreased cookie sheet and bake for 50-60 minutes.
I like folding in nuts, marshmallows, and crushed kosher for Passover dairy-free toffee or mints (sugar-free doesn't work). I just did a trial run of this: I used less than 1/4 C walnut oil and 3/4 C of canned applesauce to replace some of the oil. The texture was perfect with an amazing chocolate flavor. However, I had to bake it another 5 minutes.
